Server's don't make a difference.. all the same character. unlike M2 where you can make multiple chars, and Servers aren't like NW/FK where it's two different things for accounts. so nothing will change for you except ping.
And you can in Options. -
Most of the things you will be looking to that you want to change willbe in the settings located at the top right hand corner of the game screen. As far as servers go, you can basically play on any of them and keep the same stats, guns, etc. You just need to talk to people via whispers or other type of messaging system and you can find out where they are

Like in Metin2 where you got Free Kingdom and and New World (Yes I know a bit about M2)
Accounts/People don't change.
Server are server, some based on which you can get into by rank, or clan.
So if you join Alpha server for say, It's not like joining Free World, where you can't switch your account into New World.
You can use the same account in say, Bravo and Charlie, and nothing will change.
