make a guide on how to edit out the replay menu when you record replays?

I think you still can't disable the menu, but you could try recording a ~1024x650px box (leaving out the menu and just recording what's above)
(that 650px part is not accurate(also depending on your resolution), don't remember where the menu is exactly located on the screen)
