technically your wrong, cause there is plasma in blood, which is white.

if blood splashes out of you blood is red
blood plasma is just a liquid inside the blood mostly containing water and some other stuff -
In China there is a different PG rating system than in the US. Using red blood would make the China game an 18+ game minimum because it simulates real graphical violence. By making the blood white, they can take 3 years off the PG rating, and thus target a younger audiance.

technically..... bloods refers to all that together (plasma, red blood cells and white blood cells)
what you said would make sense if a person was dead for a while (as they all separate when a person dies). -
