If I want to put sound mods, from modhub.org, into crossfire, do I delete the original sounds and put the new ones in?

Yeah, that's what you have to do. The best thing is you just copy and choose to replace those which you want to copy, because it could be the case that the soundmod you have downloaded doesn't offer a sound for every file, so keep those which don't get replaced, so you have the regular sounds.
