Basically it means running around in circles while shooting zombies. -
Dreads can be outrun. Ghost have low hp and are easy to kill. Slugs are slow to attack. As long as you don't run strait, they have a hard time hitting you. If there's nothing BUT slugs, you can just run around them in a circle and they can't touch you.

Basically, 'kiting' just means leading the zombies around while you shoot them, without letting them get close enough to hit you. As long as no one leads (kites) the zombies into another player or gets themselves blocked in a corner, you can shoot at them for a long time without taking much (sometimes any) damage. Think of yourself as a heavily armed carrot on a stick... the zombies will blindly follow you around but will always be too far away to ever eat you.
