I'm not sure if CF deletes them permanently or if they're left in the trash bin.

If a file is over written it can still be recovered, Now if you deleted it from your HDD then your screwed, deleteing your trashbin dont mean jack

Its not impossible to get overwritten file back just highly doubt any free software is capable to recover file which is already overwritten by software X
