I think they patch it 1 server at a time, thats why they're all on, patch server 1 --> test the other servers... and so on (probly why some servers go offlines sometimes.) -

however way they do it, it shouldnt take more than an hour if they had enough sufficiently trained personel. obviously they dont -

more people wont increase the time it takes to load a computer & its databases. =P
any IT guru worth there salt knows commercial databases can grow quite large, thus taking time to load/etc.
