Is there a way to stop this? If not, what do you do to stop it? Switch weapons?

Another question. Do you get money if you break one of your guns?

Quickswitch is the only way to stop it.
The money you get for breaking your gun is the money you save by not repairing it. e.g. by not repairing your m16, you save 10k GP

Or you can hold down the right mouse button, u will stay unscoped until you stop holding it
(or was it left mouse button? correct me if im wrong ;<)

Err wait. Say if I got a Ak-47 camo 7 days. I break it in 2. I do not get any money after it breaks right? I just 'save' the money that I would've spent on repairing it.

There is no bonus for breaking the money, you just keep the money from the total repair cost. So yes, you only save that money.
If you use the weapon after it is completely broken, you will only get as much GP as if you were playing without that weapon.
